Ingredients
2 c sugar
4 eggs
2 1/2 c flour
1 c milk
3/4 vegetable oil
2 1/4 tsp baking powder
1 tsp vanilla
Directions
- Preheat oven to 350
- Line 2 9" round or square pans (or put liners in for about 24/30 cupcakes)
- In large bowl beat sugar and eggs until slightly thickened (about a minute)
- Add flour, milk, oil, baking powder, and vanilla and beat one more minute, until smooth and creamy. Don't over beat
- Pour into prepared pans
- Bake 30-40 minutes for cakes (about 20 minutes for cupcakes) until tops are golden brown and toothpick comes out clean
- Loosen sides with knife and turn upside down. Let cool before icing
